Painting and Sanding

While redoing our dining room I found the original "wainscoting" (It is nothing like they now sell in stores) with 5 layers too many painted on it. I would like to clean it up and paint it again. Here's my plan: Sand all the flat surfaces with an electric sander, use a screwdriver to remove anything in the crevices between the pieces of wood, hand sand those, then repaint. Will this work? Is there a better way? Any help would be appreciated, the people at the home improvement store just looked at me blankly. Thanks.
