Stains also were easy to remove from SSV - just some bleach on a Q-tip did the trick. I was nice to work on, but you have to use a cutting board. You might try Silestone, an engineered granite I think, as an alternative? EXPO, Home Depot's Design Center, said it no longer installs SSV due to the cracking and separation problems. They don't even offer it anymore. I asked at Lowe's Hardware and they also do not sell it.
