Old Wood Flooring

I have seen in several magazines old wood floors that look fairly weathered and completely flat in sheen. Does anyone know how to do this. Could they be painted and wiped off while still wet? If say old boards from a barn or granery were used in the house, is there a need to seal them if you want them to continue to look like that? I want my floors to look like they came out of a 200 year old cabin, but have no idea how to do that w/o staining and sealing. Any suggestions?
