old phone wiring

I had an old broken wall jack on the kitchen wall. Decided to replace it with a working mode. When I removed the old hookup, I found a strange set of wiring.
2 large grey wires with many small wires protruding. One set is all the red, white and orange, white twisted off in a bundle. Half are from each gray wire.
There is also a set of wires, half from each grey wire, containing blue,white and green wires. They are twisted together and end in wire caps. Blue,blue together, Green,green together, White,blue together and White,green together. That makes 8 wires connected to make 4.
Everything I read talks about red,green,yellow and black wires. In fact that is what is in my new outlet.
How to I wire these colors correctly to the RBGB in the outlet.
Any insight would be greatly appreciated.
