Lianne maybe you should have gone over this with your contractor before you signed a contract,if you do have a contract for this.I would have him or her show you, on samples, how this will look on the finished end.Make them get it right before they do the house.I have seen this done on very expensive homes.A small wall is built to test brick paterns(no morter used)why not for the results you want?Press the contractor for test results or to show you some homes they have done.If you singed a contract then you are showing good faith in your contractor. If you doubt their work you will need to show some tact to make them show you they know what they are doing and to give you what you want.Be respectful of their position but concerned about yours. It's something that can be worked out.Luck
