not sure I understand why you need to conserve thickness of tile??

we had solid granite surfaces installed so not too sure about your situation with laying granite tile down on counter. we had a three quarter inch plywood deck installed first and then the solid granite counter was set on top of it. the three quater inch should work for yours too...but dont know if I would suggest any thinner plywood decking on counter ...as for backer board for the walls/backsplash...seems like one quarter or three eighths inch should work if it comes in those dimensional thicknesses. others can help more I hope...LJ
