Waterborne polyurethane at this time cannot be sprayed, The air atomization of the spray gun traps to much air and moisture in the finish, this is the one problem that manufactures are working on. I work in a cabinet shop and would love it if you could. You are doing it the best way, use very thin coats let dry and sand, then recoat, you can get this like glass if you take your time.
