When cats become excited or nervous, they "sweat" out the pads of their paws. We have 3 of them, and when they go to the vet for their shots, the stainless table the vet has gets extremely tracked up.
Anyway, we use a spray bottle that will shoot water 10-15 feet. They hate it, and if they jump up on the counter all you have to do now is reach for the bottle and they are instantly back down.
My father-in-law had the same problem and he purchased via some mail order house a small device that sounds a loud beeping when his cat walked on the counter/table. After a while, the cat never went up there. I don't know the name of the device, but it was battery operated and had an ultrasonic sensor. It cost $10-15
Good luck!
