Need help with fixing bath

I have a few problems with the bathroom in my 1900 cape that I recently purchased.
1. The ceramic tiles around my bathtub are coming loose & the plasterboard behind them is crumbling. I found laths underneath, some of it is rotted, and I also found rotted wood under some of the floor tile around the tub. Where should I start to fix this? Someone suggested replacing the walls with cement board instead of blue board but I'm not sure how to cut it to fit.

2. The floor really slopes in the bathroom, which is on the second floor. Again, the same person suggested using cement board to build up the unlevel part and putting new tile over it.

3. Whoever installed the toilet had a terrible's crooked and pushed right up against the tub wall which makes it uncomfortable for anyone bigger than 120 lbs. Can this be fixed easily? My brother was worried about breaking the "beeswax seal"??? Do I need a plumber?
