is to just lay a new layer of drywall. It is pretty simple and classes are given in this at Home Depot and lot of books are out there showing how. To my way of thinking it's a lot easier than trying to patch and match and get paint to adhere evenly etc. You can use 1/4" drywall and once you've located your studs it's a piece of cake. If you have a pretty pronounced texture, you're going to have to match what you have anyway so you can rent a texture hopper and compressor or have new texture shot by someone in the trade for pretty reasonable. Cleaning up the mess you have now and trying to make it work is more than I personally have the patience for. Luck, Kizmet
