I've always heard not to cover knob and tube and if you are going to replace it with sheathed electrical cable with ground(which can be covered), then replace a whole circuit at a time from the breaker to the end without splicing sheathed electrical cable into part of a circuit.

K&T has splices wrapped in tape and not in junction boxes where all splices belong and also isn't grounded.
