Morter coating on brick

I have just laid a brick walkway at my home. First I dug a 5 inch deep ditch, placed 3 inches of gravel and 1 inch of sand. After trying a couple of different options, what I ended up doing was pouring morter mix, about 3 feet at a time, and laying the brick in the wet mix. In doing so had to come back around a few bricks and add morter to the joints. I finished with a pointing tool. Or I believe that was what it is called. Anyway it fininshed off the joint. Now for the question. I have some residue from the morter that I could not get up totally with a wet sponge at the time of laying the brick. What is the best way to remove this morter residue? I plan to stay away from acids. Also I would like to seal the brick with something that will highlight, or bring out the color, like water does. Can you recommend something? Thanks for the help.
