If the jambs are sticking out past the drywall by 1/2" then buy (or "rip" down wood on a table saw) 1/2" thick strips of wood to glue and tack to the back side of your casing.

Imagine that you just nailed the casing, as is, back on to the jambs only (not into the wall) Everything would look fine, but there would be a 1/2" wide gap in between the backside of the casing and the drywall. This is what the purchased or ripped strips will fill. If you put them on first, and flush them out to the edge of the casing, and sand them, then you should be all set.
