Cheryl, mitering or square finishing this edge is totally up to you, but the standard would normally be to square finish, with the top cap of the curb being full width, edges exposed and polished, covering the edges of the vertical tiles on the curb. The only real advantage to this is a slightly reduced level of possible water penetration at the top of the curb, and that it's easier to make a square cut, as many tile saws do not tilt to accomodate a mitered cut.

If you choose to square cut the cap, cutting the cap slowly and carefully on a wet saw will give you the best initial start, and then wet sand the cut edges with progressively finer wet/dry sandpaper on a DA sander. Finish by using a "Scothbrite" pad on the DA sander with polishing compound.
