Long-Term Paint storage

Now that winter is approaching here in Virginia, I'm once again faced with the challenge of what to do with partially used paint cans. In some cases these paints are special mixtures that match specific projects in the house. I know I'm not supposed to subject them to freezing temperatures, but I'm uneasy about storing them in my garage because they are directly below the office where I'm typing this now. This seems like a significant fire hazard! I have a storage shed in my yard but I don't want to heat it throughout the winter. Where does everyone else store their paint? Will it really make a difference if it freezes? Am I overly sensitive to this fire hazard? Should I just throw them away and hope I'll never need touch up?
