Lightening stained oak furniture

I am restoring some old oak chairs and dining table, but want a light oak finish. The surface lacquer comes off OK, but the wood had been stained. This can be lightened if I take enough sandpaper to it, but I do not want to do this as you end up ruining the surface contours. What is the best way to lighten the stain? It is a beautiful wood underneath.
