leveling the whole house!

Our house was first built somewhere between 1900-1908, no one is sure on this. It is a wood structure with plaster and lath walls. In 3 of the rooms there is UGLY painted wood paneling to hide the cracks in the walls. The house has settled in all directions and many windows do not open or close completely. If it weren't for the charm of many features in this old house it could be considered the house from Hell.
The foundation is cement and then there are many timbers on piers underneeth the house. We know we need to level the house, and that the structure is to "set" on the foundation and the piers are to hold the main weight of the house. My question is this: Where do we begin? I knopw that is a big question but maybe some one can give some guidance.
