leveling kitchen floor

I have a raised foundation home that was built in 1929. Before I begin re-doing the kitchen I need to level the floor. I seems to be off between one to two inches. I was told it is an easy thing to do but read that it should be done at increments of 1/4 inch per 24 hours. Is this information acurate? If not, what would be the best way to go about it?
