it's most likely in a house that old that the joists are not level. for true level you'll need to strip off all of the existing floor boards, if you haven't already, and then run a string line perpendicular to the joists to find the highest joist. then use whatever shimming means necessary to bring the other joists up to the same level as the highest one. good's a big undertaking but worth the time once you get done
