Laying hardwood on unlevel floor

We want to install a hardwood floor in our living room.

We had new carpet installed a year ago when we bought our 30 yr old fixer upper
(had to get a letter from a structural engineer saying it was safe to live in) and the carpet is already ruined.
I know some of the floor is not level, and someone told me that
roofing shingles were the best to use to shim under the
new strips.
We plan to use real wood, not the fake stuff.
Not sure if we wanna use the prefinished or not.
