As I understand it, and folks, I am NOT a drywall guy, I hire subs for that stuff...

What you are describing, I believe is the process of skim coating the entire wall. This is by NO means a replacement for mudding and taping the seams. Skim coating is in fact a way to create a VERY smooth surface for your final wall, but is what you would do instead of texturing, not taping.

For more information, read the replies by people who know more about this than I do, and the replies to the question a few below yours about fixing drywall after wallpaper has been removed.
