1) You don't have to prime, especially if the old color is similar or lighter than the old color. It may take at least two coats if you don't prime, I never have and no problemsl.
2)Paint the ceiling first, especially if you're doing a white ceiling, then you can cut in the wall colors with an angled brush to get a nice straight line. Walls 2nd, then trim, make sure you tape off what you don't want to get painted.
