I have used fiberglass insulation under a basement tub. Push it into the voids with sticks or 1X2s. If you use foam insulation (I suggest that you do not), you must use the low-expanding type. The regular expanding foam insulation may push the tub away from the floor and the wall, leaving you with a big mess.
