Hi Mike,
I live in a 1930 house with knob and tube. It was already insulated between the joist when I bought the house in 1977 and I added fiberglass batt on top of that several years ago. No problem. Just make sure you don't block any soffit vents. Also, I would avoid spray-in foam in case you find it necessary to replace the k & t in the future.
