installing 18 inch trevertine flooring kitchen & utility room

When installing your floor should you always start from the center and then out. I have an area in the utility room were I have a 45 degree angle wall seperating my bath room. If I go from the center of flooring it is going to look somwhat strange. Do you think that in the utility room I should cut rectangular cuts around the edges and then work my way inward? If I was to do this would I have to match the rest of the looring up in the kitchen and the restroom as well? Do you think perhapes I should try and keep everything in line with the other 3 areas?
