that is, only normal furniture, people, etc will be loading the joist from above, I don't see why your plan won't work. It sounds like the joust has taken a permanent set, and you will have to cut 1/2 to 3/4 through to get it to go straight. Do this in only 4 - 5 places, then sister the new 12' joist to the old using 3/8 inch x 3.5 inch lag bolts. That should do it, but it still will be a lot of work!
