Jeff,don't try cutting the old plaster.Just cut a piece of drywall to fit as best you can,then try your hand at plastering the rest smooth to match.I have done alot of remodeling in older homes that are all plaster.I will guess yours is plaster with lath and mesh.Depending on the size of your patch and the condition of the rest of the area, you might think about drywalling over the whole ceiling.If you just patch, wet the old plaster around the edges of the patch.Let the water soak in wetting a few times. This will help in reducing cracking of new plaster or compound.
