just my two centsfor a kitchen ,,,textured walls might tend to hold grease and grime easier.....

to remove texture, consider renting a power sander with a built in vacuum. then just sand the texture until smooth walls are restored....then you have an option to just paint or wallpaper or whatever. good luck.LJ
