I have to agree with Dodgeman on this one

I agree that a good adequate sub flooring would allow you to go in any direction or parallel to the joists, but 1 x 12's are only 3/4 and they are almost 100 years old. If the sub was beefed up more you might be able to do it say adding another 3/4 inch of MDF flooring. But, as you are, in the room with the new flooring going parrallel to the joists, the floor will definately sag there and will definately creek when walking upon.

Not advisable.
