and I will state it again. This is an old procedure that was always recomended way back on maintaining a BB table.
Any sealant, stain, or topical chemical will chip eventually and get into the food. Everything you consider should be evaluated concerning "being around food prep".
It has been rec that light sanding with 220 grit to carefully remove any dings, then rub in pure olive oil for stain and enrichment of the wood.
Many have stated that olive oil will putrify and contaminate the food. I have adamently disagreed, but every one is entitled to their thinking.
