I assume the wall is an exterior wall?

If so, I would definately plan this out and do remove a section of the wall and remove the insul and add new.

Now, this job can and will be much easier based on how careful you cut out that piece of wall board. If you carefull go straight down the side of one wall stud and then carefully down the opposite side and make square top and bottom cuts, you can reuse this patch and one will never know. You will have to sister a board along both wall studs to act as nailing boards.

I would do this project.
