I am currently in the process of refinishing my kitchen cabinets with the aid of my brother in law who is a professional cabinet maker. To strip the finish I used quick marine strip which is a paint striper (there are other stripers out there but he advised me to use this one because it is less messy and a better in his oppinion). After you paint on the stripper use a putty knife and steel wool. Then use laquar thinner and sand.
Once you are down to the natural wood you can restain, paint or simply use polyurethane if you like the look of the natural finish. And remember to sand with a 600 grit paper between coatings of the polyurethane.
