How much would it move?

How much would you expect the two sides to move? Since laminate flooring floats and is not permanently attached to the subfloor, slight movements shouldn't be a problem.

Larger movements might cause problems however. If you expect a lot of movement, I think you could just leave a larger gap at the edges of the floor. (Manufacturer calls for 1/4". You could leave a 1/2" and cover the gap with thicker molding.)

If you're concerned about vertical movement (one side of the house being higher than the other) - that shouldn't be a big problem unless the movement is more than 1/16". An additional layer of foam underlayment might solve that problem.

Vinyl certainly would be safer - but only if you expect a lot of movement.
