if the drywall is not totally messed up but just has the top layer of paper torn off and is leaving an uneven surface then he might be able to just use drywall mud and fill in the low spots to level it back out ...sand smooth and then paint with primer and paint,, consult with paint store or home depot on type of paint suggested for bathroom given the humid environment. If the drywall is really bad ,,,too damaged to easily fill in and float out smooth with drywall mud ..then you could cover it with a very thin paneling type material and then prime and paint the paneling .....just a thought hope this back with more details on the extent of drywall damage or what you plan to do to fix....I dont blame him, tearing out drywall will be a big job.
