Hey Elizabeth - I have horsehair plaster walls - all the ones I have painted have been fine with latex paint.

I primed my walls with Glidden Ultra-Hide Gripper - and depending on the color we chose, I have either Ralph Lauren, Glidden Ultra-Hide, or ICI Dulux - in various sheens - as topcoat.

Why would you want to strip the paint that is on there now? Most importantly - why would you want to use calcimine?? Calcimines are terribly delicate - and nearly impossible to recoat!

I believe in better living through chemical technology. Stick with current good quality latex paints!
