putting up new drywall is a good idea. Be sure to use the 1/4 inch thick stuff. its easier to handle and easier to install. Then have crown molding put up on the wall/ceiling intersections and you will have it made.

I think you made a good decision about not removing it. Its a mess and would be expensive in labor.
