Grouted corners...

The corner won't stay grouted anyway, because your walls will move around in relation to the countertop. Usually, I find that the corners end up getting caulked, and yes, the tile usually gets applied directly to the wallboard.

You shouldn't ever have to remove the countertop for a plumbing repair, unless you did the plumbing yourself and really screwed it up beyond comprehension, which I don't think you'd do.
