Most siding contractors use roofing nails to apply the slightly thinner accordian fold "blueboard". Roofing nails are avialable in longer lengths too for the thicker foam that you are using. Just be sure that you nail into the bottom edge of the siding where it will hit the foam. You don't really need furring strips unless your siding is in horrible shape, in which case you should probably remove it. Before you start, think about the thickness of buildup around the windows and doors. Trimming is the tricky part of the job.
