Floor covering for two-by-four sub-floor former deck

Hi, we are in the process of finishing our former deck as a fully enclosed year round room. The floor is two-by-fours with spaces between them of 1/4" to 3/8". Our dilemma is what to cover them with. We are thinking some kind of moisture barrier would be necessary and then some way of evening out the surface or floating the floor over the boards. Then we would have to either carpet or cover with laminate or tile or? We live at 3,000 feet and it snows and gets below freezing in the winter and upwards of 100 degrees in the summer. We are older retired people and need to keep the cost down to something doable and affordable. Any suggestions? Thanks.
