fittngs corroding on water heater in basement

I have a water heater in a damp basement. I noticed that all of the copper fittngs that conect to the brass fittings are very corroded and they look like car battery terminals.What causes this and can I clean them with baking soda like I would the battery. Is there some way to prevent this from happening in the future.
