finishing knotty pine kitchen cabinets

i have had $9000.00 knotty pine kitchen cabinets built for my new home. i am going to finish them myself. please advise me as to what method is best and takes less time. i have polyurathane on my existing ash cabinets which i finished and they are beautiful. i am not familiar with the wood - pine. is it better to have a rubbed finish, urathane finish, oil finish, etc. can you give your advise and the steps in which i can follow? also, how durable against dirt, stains, etc. is each coating?
