Finish on new oak kitchen cabinets

We are building a new house and oak cabinets are installed in the kitchen and baths. I want to clear coat(not stain) them for the protection and to retain the light oak color, and want to do this myself. Can you give me instructions on the best way to do this, with a brush or cloth, what product to use, water based or oil based polyurthane or ?, and to use sand paper or steel wool between coats, and how many coats to use?
