Filling cracks in plank floor

I'm renovating part of a 200+ year old house... The floors are 12" - 16" planking... pine? There are spaces between each plank (1/8" to 1/2") due to the shrinkage of the wood... is the something I can fill them with?? And should I do that before the rough sanding or before? I also plan a final sanding and then a polyurethane finish. Should the first coat of polyurethane be thinned? if so, with what?
