exterior paint job

I've read enough an the board to know the majority favor paint store brands of paint yet, I hear Kilz primer suggested. SO, should I insist my contractor use Kilz primer and Sherwin Williams paint? This is for an exterior brick paint job that it currently painted white. It's been several years since the last paint job so, it's pretty chaulky and chipped.
Couple more questions-
Should the primer be tinted to match the paint? (beige)
Will one primer coat and one paint coat be sufficient?
Which grade of primer and paint should insist on? (there seem to be 3 or 4 of each varying in price)
