Watch out! If you have cold water pipes over dry
wall, condensation can form on them and ruin all of
your hard work.

Other than that, I would use 1/2" strapping running
perpendicular to the studs, with attachment blocks
made with plywood and pieces of 2 by 4. Use the
plywood to sandwich the studs and the blocks.
