drying oak

I have a project I want to do but don't exactly know how. I have a piece of land which has many trees that will be cleared and I wish to convert these oaks(post oaks and pin oaks) to ceiling beams(decorative only). I can skin them, but how much will they shrink after they dry and cure, and how can I dry and cure them myself? I have an old school bus on the property which I could use for storing the logs and it's in Texas so the bus will act as an oven during the summer but there is no way to keep out the humidity. Can anyone help me out?
