Sherrill, Formica countertop laminate would be a good choice. Thin enough to not interfere with the operation of the door, and available in styles/colors to suit most any look you would want, including wood grains. I've also seen plexiglas used for this, but the laminate will be more scratch resistant and look better. It can be glued to the door or pre-drilled and screwed or tacked on, so that you only need putty a few small holes should you wish to remove it later.
