The trouble with wood is that it expands and contracts with the temp and humidity changes. One day your paper/paint job looks great, the next there's a wrinkle at every joint in the wood. 3/8"drywall liberally glued and then screwed to the barnwood would give you the best results. Or just take down the barnwood and use 1/2"drywall over the studs.
