Cutting an inside corner

I assume you'll be cutting the laminate, then gluing it in place. So here goes...
1) Measure, draw a template (if possible), measure, measure, and measure
2) If the lines to cut are straight, using a GOOD straight-edge, cut with a sharp utility knife. Just take your time and make many passes.
3) Alternatively, you can use a plastic cutting blade in a saber saw. If you decide to do it this way, put some good tape over the area to cut. This will help prevent chip-out (the finer the blade, the better. I've even seen some knife-like blades that would be good).
