Crown moulding corner blocks

I am using corner blocks on my crown moulding project and knowing that my blocks must be flush with the ceiling I am very hesitant in nailing them in place since my walls are not a true 90 degree angle. Do I place them flush with the ceiling and then caulk the open spaces? Once they are up any helpful hints in placing the moulding would be appreciated. I am not actually sure how the moulding will attatch other than at a 45 against the blocks.
